The Old School Strawberry
Strawberry is one of the most traditional flavors around and it’s a proud member of the Neapolitan group. Along with vanilla and chocolate, you can bet that strawberry ice cream makes regular appearances on dessert menus across North America. There’s no denying it provides a sweet treat that works great in a milkshake or atop a traditional waffle cone. It’s also one of the best flavors to make at home because it’s not only easy, but you can also take it to a whole new level with some pretty snazzy recipes.
1 quart fresh juicy strawberries
1 1/2 cups heavy cream, divided
3/4 cup white sugar
3 egg yolks
3 tablespoons light corn syrup
This is a great recipe that lets you get to various consistencies for your strawberries. For example, if you want a creamier product then go ahead and purée your strawberries beforehand. Or you can choose to dice them up to get a few bigger chunks. Whichever you choose, it’s important to use a food processor first to at least get a nice solid base of crushed Strawberries to maximize flavor.
With your saucepan over medium heat, pour in 1 1/4 cups of your cream and let it heat until it forms a gentle bubble at the edges. In a large bowl, put together your sugar, egg yolks, and the remainder of your cream while adding the corn syrup as well. Carefully pour the hot mixture into the cold one, while whisking at an even pace. With everything mixed together, pour the entirity back into your saucepan and heat for about 5 min. You’ll notice that the mixture will thicken as it heats, and you’ll know it’s done when it can gently coat the back of your metal spoon. Just make sure that you keep the heat down so that it doesn’t start to boil.
At this point you can either choose to strain the custard and your berry purree into the mix, or just throw in your added ingredients all at once if you want a chunkier product. From here, you’re good to go and all you have to do is throw it into your ice cream machine to finish off the process.
Fancy Dancy Strawberry
Here is a version that will knock your socks off that is slightly more tangy and rich. After a few tries, you’ll get restaurant quality ice cream that your guests might not even guess is homemade!
1 pint fresh strawberries , hulled and chopped
1 tablespoon fresh lemon juice
2 large eggs
1 cup sugar , divided
2 cups heavy whipping cream
1 cup milk
1 teaspoon vanilla extract
Take your strawberries, lemon juice, and 1/4 sugar, and combine them in a mixing bowl. You can choose to crush all of these ingredients together or again, those who like a thicker ice cream can just gently blend them. Put this mixture in your fridge for about one hour.
Take a bowl that contains your aches and fluffy some up with some controlled whisking. You want into the light and fluffy, and this should take about 2 minutes.
Once you have your edge to the right consistency, gradually add the rest of the sugar while blending carefully. Putting your milk and vanilla, and continue just her so that everything is well blended.
Now it’s time to take your strawberry mixture and added to the mix as well, the consistency will obviously vary depending on what you’ve done with your strawberries beforehand. Again, we recommend a mixture of puree with actual chunks to get that real strawberry flavor.
The last step involves finishing it off with your whipping cream and mixing everything until it’s evenly distributed. Now you got the base of your gourmet ice cream, and the last step is to use your ice cream maker.
